Abstract

In this article,first,postmodernism and its most important components, such as ontological theme, revalation of novel techniques,short circuit,indeterminacy,time disturbance,shift of narrator and point of view, rebellious characters,multiple endings,are shortly described.Then the existence of some of them in two short stories of Abootorab Khosravi( PELEKAN and HUZUR) is demonstrated,using some examples of the texts.Although these two texts have some of the elements of modernism ,ontological theme, which is the dominant element of postmodernism,can be seen in these texts; therefore they could be considered as postmodern texts.

Abstract

The aim of this study was to determine the effect of temperature, pH, salt, citrus aurantium L. and modified atmosphere packaging (50% carbon dioxide, 45% nitrogen and 5% oxygen) on control of Staphylococcus aurous in fish tofu of type. Descriptive-analytic study was carried out in the year of 2017-2018. In this research, pH was 5.5, 6 and 7.5, and temperature was 4, 25 and 37 ° C, salt at 0, 1.5 and 3%, and orange essential oil at 0.025 and 0.05% was considered. According to the results, it is found that the lower the pH of the tofu samples is lower, Staphylococcus aureus is more restricted. For example, at pH 5.5 with 0.025 and 0.05% of orange essential oil in tofu samples, bacteria did not grow, but at pH 6 and 7.5 there was no growth of bacteria and growth was more than usual. There was an enormous increase in Staphylococcus aurous at pH 7.5 with 1.5% salts and orange essential oil 0.025% at temperatures of 4, 25 and 37 ° C. Increasing temperature to 25 ° C and 37 ° C, as well as at pH 5.5, 6 and 7.5, the growth of Staphylococcus aurous in tofu fish has been increased. In this study, the essential oil of orange herb was stored at 0.05 % at 4 ° C, 3% salt and pH 5.5, to control the growth rate of Staphylococcus aurous in tofu fish for 8 days.

Abstract

The reduction of sugar consumption is one of the major challenges for nutritionists and food industry. Therefore, it is significant to replace sucrose with other types of sweeteners, especially, natural ones. The aim of the present study is to produce low-calorie, low sucrose Iranian yellow carrot jam and to optimize the formulation by employing response surface methodology. The three independent variables were stevia, as a low-calorie sugar replacer (0.05 -0.3% w/w) and inulin as a prebiotic texturizer (2 -5% w/w) in order to compensate sugar elimination defect on viscosity and Brix. The fitted models indicated a high coefficient of determination. The results revealed that inulin and suger are as the independent variables which had significant effects on Brix, moisture, viscosity, and sensory scores (except taste), lightness (L*) and redness (a*) (p≤0.05). Also, pH and acidity and (b*) were not affected by stevia, inulin and suger concentration (p≤0.05). The optimization of the variables, based on the response surface, demonstrated that utilizing 5% w/w inulin and 0.23% w/w stevia and 49.3% suger produced the optimum Persian yellow carrot jam with the desirability of 0.721 without undesirable changes in the physicochemical and organoleptic properties. According to nutrition value of Iranian yellow carrot, we could use it for producing functional food and improve its healthy benefits.

Abstract

“Paradise” is one of the concepts common between myths and religions. This paper uses an analytical-descriptive method to study the concept of Paradise, the origin of which is different in religions, and there is existence of commonalities of this aspect. The existing similarities and shared view of the Paradise indicate the conceptual commonality of this word in rituals. The religion of Islam uses the Paradise in the form of the word “Ferdows” and considers it as a reward for the pious and righteous. In other religions, too, the high-frequency of Paradise in religious books suggests a broader concept of it. In other words, its purpose is to be close to God and the Creator of the universe to achieve immortality. Mythical man, by imitating the gods who are immortal, wants to join eternity and open the wings to the infinite world and immortality from destruction in the immortal universe. He has tried to build a utopia on Earth and his image of the Paradise that bears a complete resemblance to the worldly Paradise. The Paradise-like cities imitated from the heavenly ones and built on Earth were analyzed in this paper. Examples of the mythical heroes of Shahnameh who tried to build Paradise on the Earth were mentioned.
